Even though most of these recipes weren’t anything I would cook or eat, mostly being meat based, I still loved his snippets of backstories and cooking tips, and most of all, his humor. In what might be his most accessible book yet, Bourdain reveals his "Ina Garten-like need to feed the people around me" with a terrific collection of recipes for family and friends.

The Pomodoro worked wonderfully with them but I did need to simmer for longer than the 20-25 mins to make it thick enough to coat the meatballs and not make the bread soggy in the heros. The result is a home-cooking, home-entertaining cookbook like no other, with personal favorites from his own kitchen and from his travels, translated into an effective battle plan that will help you terrify your guests with your breathtaking efficiency. From Anthony Bourdain in this book, I learned that certain terms to describe cuts of beef are marketing bullshit and "douche bait.The spices are not overwhelming at all, in fact the chicken had the most delicious flavor all the way through and it was very balanced. teaspoons of cayenne pepper in and it wasn't enough, but to each, his own when it comes to spicy taste. He talked about each dish - and it’s like you’re sitting eating it with him and he’s just sharing stories. Also, our brioche buns had gotten rather soggy on bottom after being pressed--I'm not sure how you would prevent this, so next time I'd probably make these sandwiches on crusty baguettes instead, like the Melissa Clark version. We got two bunches of baby beets from the farmers’ market, one red, one golden, so decided to make this dish, with a couple adjustments.

I like how in this version, the tuna mixture is mixed with anchovies, herbs and lemon, which makes it really nice and flavorful. What sets this mac n cheese apart is the addition of mustard powder, cayenne pepper and worcestershire to the béchamel.I'm not sure the butter under the skin really added much, and the photos of the chicken prepped before going into the oven show twice as many butter pats put under the breast, so I did that and ended up distributing the full 4T…. I almost think this is the cookbook that best accompanies his memoirs, starting with Kitchen Confidential, because there are recipes that date from his seafood slinging and poor brunch making days.

But it stands the reason that the audience for Appetites falls into two categories: the urban foodie, and/or the Bourdain fan, and whether you're in it for the eats or the prose, you'll walk away satisfied. The chapters are idiosyncratic: "Salads," "Soups," "Pasta," "Birds," "Hamburger Rules," "Party 101," "Fight!

Anthony Bourdain is many things: He’s the host of the wildly successful CNN show Parts Unknown; he’s a father; he’s the author of best-sellers like Kitchen Confidential; and way back when, he was just another restaurant chef trying to make it through a shift. APPETITES, in addition to presenting an eclectic, expletive-laden portrait of one s family s fare, is also a really great cookbook.
